New England Baked Squash

    Ingredients

    2 acorn squash, about 1 lb. each
    2 tart apples
    1 1/2 cups maple syrup
    2 Tbsp. lemon juice
    1/4 cup butter
    1/4 cup cornstarch
    1 tsp. cinnamon
    1/2 tsp. ginger
    1/2 teaspoon nutmeg

    Directions

    Halve squash and remove seeds.  Place cut side
    down in greased baking pan.  Bake at 350 for 30
    to 40 minutes.  Cool and peel.  Cut into 1/2 inch
    slices and spread on bottom of baking dish
    (9 x 13 inches).
    Pare and thinly slice apple; arrange over squash.  
    Sprinkle amonds and raisins over apples.  
    In a saucepan, combine syrup, lenmon juice,
    butter, cornstarch and spices.  Cook stirring until
    thickened.  Pour over squash and apples.  Bake
    at 350 for 30 minutes or until tender.
