Corn Spoon

    Ingredients

    3 eggs, separated
    1/4 cup corn meal
    1 tsp. salt
    1 1/4 cups milk, scalded
    2 Tbsp. butter
    17 oz. can creamed corn
    3/4 Tbsp. baking powder

    Directions

    Beat egg whites until fluffy.  Beat egg yolks
    separately in a bowl until lemon color.  Scald milk
    and gradually add corn meal, stirring.  Mixture will
    become mushy.  Beat in egg yolks and add
    baking powder.  Fold in egg whites.  Pour into
    oven proof bowl sprayed with non-stick coating
    and bake at 350 for 45 minutes.
