    Spicy Stuffed Mushrooms

    Ingredients

    1 lb. fresh medium mushrooms
    1/2 lb. hot or regular sausage
    1/4 cup finely chopped onion
    1/3 cup ketchup
    2 Tbsp. bread crumbs
    1 tsp. dried parsley flakes

    Directions

    Remove stems from mushrooms and chop them
    finely, enough to measure 1/2 cup.  Crumble
    sausage in large skillet; add chopped mushroom
    stems and onion and cook until sausage is
    browned, stirring frequently.  Drain excess fat; stir
    in ketchup, bread crumbs and parsley.  Fill each
    mushroom cap with sausage mixture;  place in
    3-qt baking dish.  Bake in preheated 350 oven for
    20 minutes.
    Serve Hot
