    Zucchini and Red Pepper Sauce

    Ingredients

    1 Tbsp. butter
    1/2 small onion, sliced
    1 small zucchini, sliced
    1/2 small red pepper, coarsely chopped
    1 Tbsp. balsamic vinegar

    Directions

    In medium skillet, melt butter.  Add onion and
    garlic; cook for 1 minute.  Add zucchini and red
    pepper; cook for 5 minutes or until vegetables are
    tender.  Add vinegar.  Spoon mixture into food
    processor or electric blender; process just until
    finely chopped.  Serve warm over grilled sliced
    chicken - also can be used on meat or fish.
    Yields enough for 1 lb. of meat.
