    Papaya-Mint-Basil Beurre Blanc

    Ingredients

    2 whole papayas
    2 oz. fresh basil
    4 oz. brandy
    1 cup whipping cream
    5 sprigs dill
    2 oz. fresh mint
    4 oz. butter
    1 tsp. shallots, chopped

    Directions

    Blend herbs with fruit on high speed until pureed.  
    In a medium saute pan, add brandy.  Flame off
    alcohol until flame disapers.  Add butter and melt
    for 2 minutes.  Add puree and saute for 3-4
    minutes.  Ladle over broiled, steamed or sauteed
    fish.
    Yields 2 cups.
