    Hunter's Sauce

    Ingredients

    1 can (3 oz.) chopped mushrooms, drained
    1 shallot, finely chopped
    4 Tbsp. butter
    1 envelope brown gravy mix
    3/4 cup water
    1/2 cup dry red wine
    1 Tbsp. tomato paste
    3/4 tsp. fine herbs

    Directions

    Cook mushrooms and shallots in butter until
    tender but not brown.  Blend in gravy mix; add
    water, wine, tomato paste and fines herbs.  Cook
    over medium heat, stirring constantly until mixture
    thickens and bubbles.  Let simmer very slowly
    about 15 minutes to mellow.  Garnish with sliced
    mushrooms or sprig of parsley and serve over
    beef.
