    Sparkling Berry Salad

    Ingredients

    2 envelopes KNOX unflavored gelatine
    2 cups cranberry-raspberry juice
    1/3 cup sugar
    1 cup club soda
    1/4 cup creme de cassis (black currant liqueur)
    1 tsp. lemon juice
    1 tsp. fresh grated orange peel
    3 cups assorted blueberries, raspberries,
    strawberries

    Directions

    In medium saucepan, sprinkle unflavored gelatine
    over 1 cup cranberry-raspberry juice; let stand one
    minute.  Stir over low heat until dissolved, about 5
    minutes.  Add sugar until dissolved.
    In large bowl, blend remaining 1 cup cranberry-
    raspberry juice, soda, gelatine mixture, liqueur,
    lemon juice and orange peel.  Chill for about 1
    hour, stirring occasionally.  Pour into 6 cup mold;
    chill for about 3 hours.
