    Pistachio-Coconut Frozen Salad

    Ingredients

    2 cup sour cream
    1 pkg. instant pistachio pudding
    1 1/3 cup coconut
    8 1/4 oz. can crushed pineapple

    Directions

    Combine pudding mix and sour cream.  Add
    coconut and pineapple (undrained).  Stir until
    blended.  Spoon into a 9 x 5 inch loaf pan.  Freeze
    until firm.
    When ready to serve, dip pan into warm water and
    unmold onto plate.
