Carrot Jello Salad

    Ingredients

    1 pkg. - 4 serving size - orange jello
    3/4 cup boiling water
    1/2 cup cold water
    Ice cubes
    1 Tbsp. lemon juice (optional)
    3/4 cup shredded carrot

    Directions

    Dissolve gelatin in boiling water.  Combine cold
    water and ice cubes to make 1 1/4 cups.  Add to
    gelatin with leomon juice, stirring until slightly
    thickened.  Remove any unmelted ice.  Fold in
    carrots.  Spoon into serving bowl or individual
    glasses.  Chill about 30 minutes.
