    Zucchini Pancakes

    Ingredients

    3 medium zucchini, shredded
    1/2 tsp. salt
    1/2 cup finely chopped onion
    Tbsp. butter or margarine
    2 eggs, slightly beaten
    1/4 cup flour
    1/8 tsp. pepper
    oil

    Directions

    Place zucchini in a colander.  Sprinkle with salt
    and set aside for 30 minutes.  Squeeze liquid out
    from zucchini with your hands.  In a medium skillet,
    cook the onions in the butter over medium heat,
    about 3 minutes or until tender.  Transfer the
    zucchini and onions to a large bowl.  Stir in the
    eggs, flour, and pepper.
    Drop batter by tablesppons into the oiled skillet
    and fry, turning once.
