    Potato Pancakes

    Ingredients

    6 large or 8 medium potatoes, peeled
    1 large egg
    2 Tbsp. flour
    1 large onion
    salt and pepper to taste

    Directions

    Grate or blend potatoes and onion.  Pour off
    excess liquid.  Beat egg and combine with
    potatoes and onion.  Add flour, salt and pepper.  
    Drop by spoonfuls on hot, well-oiled frying pan.  
    Spread out batter with spoon to make it very thin.  
    When edges look brown, turn and fry till golden
    and crisp.  Serve with sour cream.
