    Onion Corn Meal Pancakes

    Ingredients

    3/4 cup corn meal
    1/2 cup sifted all-purpose flour
    3 Tbsp. instant minced onion
    2 tsp. baking powder
    3/4 tsp. salt
    2 Tbsp. shortening
    1 1/4 cup milk

    Directions

    Combine the first 5 ingredients in a mixing bowl
    and mix well.  Add shortening and blend it in to
    fine crumb consistency.  Stir in milk.  For each
    pancake, pour 2 tablespoons of batter onto a
    lightly greased hot griddle.  Cook over medium
    heat until bubbles form over the top.  Turn to brown
    on other side.
    Yield 12 pancakes.
