Lemon Pancakes Ingredients 2 eggs, separated 1/2 cup plain yogurt grated zest of 1 lemon 2 Tbsp. lemon juice 2 Tbsp. butter, melted 3 Tbsp. sugar 1/2 cup cake flour 1/4 tsp. baking soda 1/4 tsp. salt Directions In large mixing bowl, whisk together egg yolks, yogurt, lemon zest and juice, butter and sugar. Sprinkle on remaining ingredients, except the egg whites, blend together. In a separate bowl, beat the egg whites until soft peaks form. Gently fold into batter. Drop batter, 1/4 cup at a time, on griddle. Fry until bubbles form and the flip and cook until done. |
