    Featherweight Pancakes

    Ingredients

    3 eggs, separated
    1/4 tsp. salt
    1/4 cup flour
    3/4 cup cottage cheese

    Directions

    Beat egg whites.  Beat egg yolks using same
    beater.  Stir salt, flour and cottage cheese into
    egg yolks.  Fold in egg whites.  Drop by small
    spoonfuls onto hot, lightly greased griddle.  Cook
    until golden brown.
    Yield 16 servings.
