    Buckwheat Pancakes

    Ingredients

    1/4 cup whole wheat flour
    1/4 cup buckwheat flour
    1/2 cup all-purpose flour
    1 tsp. baking soda
    1 tsp. baking powder
    1/2 tsp. salt
    3 Tbsp. brown sugar
    2 eggs
    1 cup buttermilk
    2 tsp. grated orange zest
    3 Tbsp. butter, melted

    Directions

    Combine dry ingredients and mix with fork.  In
    another bowl, whisk together eggs, buttermilk, and
    zest.  Pour into flour mixture and stir to combine.  
    Pour in butter and gently whisk.
    Fry on griddle.
    Makes 12 pancakes.
