    Applesauce Pancakes

    Ingredients

    1 cup sifted flour
    1/4 tsp. salt
    1 1/2 tsp. baking powder
    1 cup applesauce
    1/4 tsp. grated lemon rind
    1/4 tsp. ground cinnamon
    1 Tbsp. sugar
    3/4 tsp. vanilla extract
    2 eggs, separated
    1 1/2 Tbsp. melted butter

    Directions

    Sift first 3 ingredients together into a mixing bowl.  
    Blend in the next 5 ingredients.  Beat egg yolks
    slightly and add to the mixture along with butter.  
    Beat egg whites until they form stiff peaks and fold
    into the batter.  Pour 1/4 cup batter onto a lightly
    greased hot griddle.  Cook until bubbles form over
    the top.  Turn and brown the other side.
