Apple Pancakes Ingredients 1 cup sifted all-purpose flour 1/2 tsp. baking powder 1/2 tsp. salt 1/8 tsp. baking soda 1/4 tsp. ground nutmeg 1/4 cup sugar 2 eggs, beaten 1 cup milk 1 Tbsp. melted butter 3/4 cup shredded apple 1 tsp. lemon juice Directions Sift together first 6 ingredients. Combine eggs and milk and gradually stir into flour mixture. Add melted butter and beat lightly with a beater. Mix shredded apple with lemon juice and blend with batter. Drop 2 tablespoons of batter onto a lightly greased hot griddle. Turn over when bubbles form over the top. Yields 16 pancakes. |
