Spinach Salad

    Ingredients

    2 pkgs. (10 oz.) fresh spinach
    4 hard-boiled eggs, chopped
    8 strips bacon, fried and crumbled
    1 cup shredded Swiss cheese
    Croutons (if desired)
    Dressing:
    1 cup oil
    5 Tbsp. red wine vinegar
    4 Tbsp. sour cream
    1/2 tsp. dry mustard
    2 Tbsp. sugar
    coarsely ground pepper
    2 tsp. chopped parsley
    2 cloves garlic, crushed

    Directions

    Mix dressing at least 6 hours before using.  Toss
    spinach with desired amount of dressing before
    serving.  Top with eggs, bacon and cheese.
