Syrian Salad

    Ingredients

    1 cup burghul (medium grain)
    1 cucumber
    2 stalks celery
    2 tomatoes
    6 radishes (optional)
    1 green pepper (optional)
    1 bunch green onions
    1 bunch parsley
    1 cup mint leaves fresh or 1 Tbsp. dried (optional)
    1 head lettuce, broken up
    Dressing:
    Juice of 3 lemons
    1/4 cup olive oil
    salt and pepper to taste

    Directions

    Wash and soak burghul for 1/2 hour before
    making salad.  Slice all vegetables.  Add chopped
    parsley, mint and lettuce.  Drain water from
    burghul thoroughly and add.  Toss with dressing.
