    Turtle Soup

    Ingredients

    2 lbs. turtle meat
    4 quarts water
    2 large spoons Lou Ana oil
    2 1/2 Tbsp. flour
    2 large onions chopped
    1/2 cup bell pepper, chopped
    1/2 cup celery, chopped
    1 can tomato paste
    salt and pepper to taste
    1 tsp. whole cloves
    1 tsp. whole all spice
    1 Tbsp. Worcestershire sauce
    1/4 cup lemon juice
    1 cup sherry

    Directions

Add turtle meat and stock.  In cheese cloth, put Add
turtle meat and stock.  In cheese cloth, put cloves and
allspice and tie it, then add to soup.  Add
Worcestershire and lemon juice and cook for 1 1/2
hours.  Add the sherry and cook another half hour.  All of
this should be done on a low fire.  Serve with mashed
hard-boiled eggs on top.Serve with mashed hard-boiled
