    Terrapin Soup


    1 pint terrapin meat
    1 quart chicken stock
    2 Tbsp. butter
    1 Tbsp. flour or arrow root flour
    2 hard boiled egg yolks
    1 cup hot cream
    1/4 cup Madeira or sherry
    salt and pepper
    pinch of mace

    Directions

    Simmer meat in stock for half hour or until tender.  
    Mix flour and butter and heat.  Add hot cream and
    mashed egg yolks.  Add meat and stock.  Must be
    two cups of stock.  Let simmer a moment and turn
    off heat.  Add wine and serve.
