    Split Pea Soup II

    Ingredients

    1 cup split green peas, rinsed
    1 carrot, grated
    2 medium onions, chopped
    1 potato, grated
    1/4 cup celery, diced
    1/4 cup green pepper, finely chopped
    1 tsp. sugar
    salt and pepper to taste
    1 ham bone or 1/2 cup ham, cubed, with excess
    fat removed

    Directions

    Cover split peas with 6 cups boiling water; let
    soak for 1 hour.  Add ham bone, carrot, onion,
    potato, celery, green pepper, sugar.  Simmer 30 -
    40 minutes or until peas are tender.  Season with
    salt and pepper.  Add water if needed; simmer 5-
    10 minutes longer.
    Garnish with diced ham.
    Serves 4.
