    Smoked Sausage-Cheese Soup

    Ingredients

    2 cups water
    1 cup corn
    1 cup chopped potatoes
    1 cup chopped celery
    1 cup chopped carrots
    1/2 cup chopped onion
    2 beef boullion cubes
    1/4 tsp. Tabasco sauce
    1/2 lb. Velveeta cheese, cubed
    1/2 to 1 lb. smoked sausage, cut into bite-size
    pieces

    Directions

    Place all ingredients, except cheese, in large pan
    or crock-pot.  Stir gently; bring to a boil.  Cover
    and simmer on low until vegetables are tender,
    about 2 hous.
    Just before serving, bring soup back to boil and
    add cheese.  Stir gently until blended and cheese
    is melted.  Do not boil after adding cheese.
    Serves 4 to 6.
