Russian Cabbage Soup Ingredients 2 lbs. beef short ribs 1/2 lb. chicken wings 3 quarts water 2 cups shredded carrots 2 cups chopped onion 2 cups chopped celery 8 cups shredded cabbage 1 - 28 oz. can tomatoes 1 Tbsp. salt 1/2 tsp. pepper 1 - 1 lb. can sauerkraut, rinsed and drained 4 Tbsp. lemon juice 2 Tbsp. sugar Sour Cream Directions Simmer beef ribs, chicken wings and water for 3 hours. Remove meat from bones. Discard bones. Refrigerate meat and broth separately overnight. Skim off and discard fat the next day. Combine broth and meat, add other ingredients and simmer 3 hours. Serve in bowls with dollop of sour cream. |
