    Potato Soup

    Ingredients

    3 to 4 cups peeled potatoes, cubed
    3 cups yellow onions
    2 quarts water
    1 Tbsp. salt
    4 to 6 Tbsp. whipping cream
    2 to 3 Tbsp. softened butter
    Chopped parsley and chives

    Directions

    Simmer potatoes and onions in water for 15
    minutes, uncovred.  Mash vegetablesin blender
    with liquid.  Season to taste.  Stir in cream and
    butter.  
    Garnish with parsley and chives.
