    Potato and Kale Soup

    Ingredients

    4 tsp. olive oil
    1 medium yellow onion, chopped
    3 cloves garlic, minced
    3 medium potatoes, peeled and sliced
    4 cup water
    1/2 lb. kale, trimmed and shredded
    1/4 tsp. black pepper

    Directions

    In a large heavy saucepan, heat the olive oil over
    moderate heat for 1 minute; add the onion and
    cook until soft - about 5 minutes.
    Mix in the garlic, potatoes, and water; cover and
    bring to a boil.  Adjust heat and simmer,
    uncovered for 20 minutes or until tender.  Using a
    potato masher, mash potatoes right  in the
    saucepan.  Add the kale and pepper, cover and
    simmer for 15 minutes or until the kale is tender.
    Serves 4.
