    Portuguese Red Bean Soup

    Ingredients

    2 cans (15 oz.) kidney beans
    1 small onion, sliced
    1 clove garlic, chopped fine
    1 large potato, diced
    1 Tbsp. shortening
    1/8 tsp. pepper
    1/8 tsp. paprika
    Salt to taste
    2 cans (15 oz.) tomato sauce
    1 ring Portuguese or Italian sausage, sliced
    2 quarts water
    1-2 Tbsp. lemon juice
    1/4 small head cabbage, chopped
    1/2 cup macaroni
    1/2 cup celery, chopped
    Chopped watercress

    Directions

    Cook beans, onions,  garlic, potatoes, shortening,
    salt, paprika and pepper 15 minutes.  Add 2
    quarts water, sausage, tomato sauce and lemon
    juice.  Cook 2 hours.  Add cabbage and macaroni
    and cook 15 minutes more.
