    Navy Bean Soup

    Ingredients

    1/4 cup onion, chopped
    2 Tbsp. olive oil
    1 lb. can navy beans with bacon
    1 cup water
    1 small potato, peeled and diced
    2 small carrots, diced
    1 clove garlic, minced
    1/4 tsp. sugar
    1/2 tsp. salt
    chopped parsley
    thin lemon slices

    Directions

    In medium saucepan, saute onions in olive oil over
    moderate heat.  Add beans, water, potato,
    carrots, garlic, sugar, salt.  When about to boil,
    turn heat down and simmer about 20 minutes.  
    Garnish with parsley and thin lemon slices.
    Serves 4.
