    Hard Rock Cafe Potato Soup

    Ingredients

    1 Tbsp. oil
    1 medium onion, chopped
    3 celery stalks, diced
    3 large potatoes, diced
    32 oz. chicken or vegetable broth
    1 bay leaf
    Salt and pepper

    Directions

    Heat oil in a pot and saute onion until it is
    translucent.  Add celery and saute for a couple
    more minutes.  Add potatoes and saute, covered
    for 5 minutes.  Add the rest of the ingredients and
    cook until the potatoes are tender.  Remove the
    bay leaf.  Let cool for a few minutes, then puree.
