    Fish Chowder

    Ingredients

    2 Tbsp. butter
    1 large onion, diced
    1 bell pepper, diced
    1 large potato, diced
    6 thin slices of salt pork, diced
    3 large fish fillets, diced
    1 1/2 cups fish stock, or water
    2 cans (10 1/2 oz.) potato soup
    1 can (10 1/2 oz.) cream of shrimp soup
    2 cans (10 1/2 oz.) milk

    Directions

    Saute onion and pepper in butter.  Add potato and
    simmer 4 - 6 minutes.  Fry diced salt pork.  Add
    salt pork, diced fish fillets and 1 1/2 cups of fish
    stock to vegetable mixture.  Simmer about 10
    minutes.  Add potato soup, shrimp soup, and
    milk.  Simmer until fish is cooked 15 - 20 minutes.
