    Cream of Spinach Soup

    Ingredients

    10 oz. pkg. fresh spinach
    3 Tbsp. butter
    3 Tbsp. flour
    1/2 cup chopped onion
    3 cups chicken broth
    Salt and pepper
    1 cup whipping cream

    Directions

    Wash and steam spinach until soft.  Make a roux
    of the butter and flour.  Cook the onion in it until
    soft.  Add broth and spinach and simmer for about
    20 minutes.  Blend in blender until smooth.  
    Season to taste.  Add cream last.  Check
    seasoning and serve hot.
