    Corn Soup

    Ingredients

    3/4 lb. chicken pieces
    1 quart water
    1 cup corn
    1 Tbsp. green pepper, finely chopped
    1 Tbsp. onion, finely chopped
    1 Tbsp. celery, finely chopped
    1 tsp. butter
    1 1/2 tsp. salt
    1/2 tsp. sugar
    dash red pepper
    egg noodles or rice, if desired

    Directions

    Simmer chicken in water until tender.  Remove
    chicken from broth and set aside to cool.  Add
    corn to broth and bring to a simmer.  Saute green
    pepper, celery, and onion in butter until tender;
    add to broth.  Remove chicken from bone, chop,
    and add back to broth along with salt, sugar and
    red pepper.  Add 1/2 cup uncooked egg noodles
    or 3 Tbsp. rice, if desired and cook 10-15 minutes
    or until tender.
    Serves 8.
