    Cheesy Potato Soup

    Ingredients

    3 cups potatoes
    1 cup water
    1/4 cup onion, diced
    1/2 cup celery, diced
    1/2 cup carrots, diced
    1/2 to 1 tsp. chicken bouillon
    1/2 tsp. salt
    1/8 tsp. pepper
    1 1/2 cups milk
    2 Tbsp. flour to thicken
    4 inch slice Velveeta cheese

    Directions

    Boil potatoes, onion, celery, chicken bouillon,
    carrots, salt, and pepper in water until soft.
    In a separate sauce pan, make a white sauce with
    the flour and milk, stirring constantly over medium
    heat until well blended - add cheese.  Stir until
    blended.  Add cheese mixture to vegetable
    mixture.  Simmer and stir until completely blended.
