    Smashed Pea & Barley Soup

    Ingredients

    48 oz. chicken broth
    1 1/2 cups dried split peas
    1/2 medium onion, coarsely chopped
    1 medium carrot, coarsely chopped
    1 stalk celery, coarsely chopped
    1 clove garlic, minced
    2 tsp. lemon juice
    1/2 cup pearl barley
    1/4 tsp. dired parsley
    1/4 tsp. dried thyme
    1/2 tsp. sugar
    Salt and white pepper to taste

    Directions

    Place broth, split peas, onion, carrot, celery,
    parsley, thyme, lemon juice, and garlic into a 3-
    quart pot.
    Bring to a boil over medium-high heat.  Reduce
    heat and simmer, uncovered, for 1 hour.
    Blend in a food processor or blender - small
    amount at a time.  Return pureed soup to pot and
    add barley.  Bring to a boil, reduce heat and
    simmer 45 minutes or until barley is tender.
    Season with salt and white pepper to taste.
