    Black Bean Soup

    Ingredients

    1/2 lb. bacon, cut into 1-inch pieces
    1 cup celery, sliced
    1 cup onion, chopped
    2 tsp. garlic, minced
    2-15 oz.cans black beans, drained
    16 oz. jar Chi-Chi's Picante Sauce
    10 1/2 oz. can chicken broth
    1 tsp. crushed red pepper flakes
    1/2 tsp. pepper
    2 Tbsp. fresh cilantro, chopped

    Directions

    In large saucepan, combine bacon, celery, onion
    and garlic.  Cook over medium heat, stirring
    occasionally, until bacon is crisp and vegetables
    are tender.  Drain.  Add remaining ingredients
    except cilantro.  Bring to a boil; reduce heat to
    low.  Simmer, stirring occasionally, 25-30
    minutes.  Stir in cilantro.
    Serves 6.
