    Bennigan's Onion Soup

    Ingredients

    3 Tbsp. butter
    2 Tbsp. oil
    5 cups thinly sliced onions
    1/2 tsp. sugar
    2 1/2 quarts beef broth
    1/2 cup dry white wine
    salt and pepper to taste
    8 slices French bread
    2 cup grated Gruyere cheese

    Directions

    Heat the oil in a 5 quart pan.  Add butter and let
    melt.  Add onions and cook slowly covered for 10
    minutes over low heat.  Add sugar and salt.  Cook
    until onions are caramelized.  Add wine and cook
    5 more minutes over low heat.  Add broth and
    simmer uncovered for 30 minutes.
    Toast the French bread slices until golden brown.  
    Put soup into ovenproof bowls.  Put bread on top
    and cover with cheese.  Bake at 350 for 20
    minutes.
