    Cherry Sauce for Ham

    Ingredients

    2 cans pitted Bing cherries
    2 Tbsp. corn starch
    1/4 cup water
    1/2 cup brown sugar
    Juice of one lemon

    Directions

    Mix corn starch in 1/4 cup
    cold water.  Heat two cans
    of cherries, add the corn
    starch and water mixture
    and stir in the brown
    sugar and lemon.  Cook,
    stirring constantly, until
    thick.  
    Serve hot over baked
    ham.

    Ham Mustard Sauce

    Ingredients

    1 tsp. butter
    1 Tbsp. flour
    1/3 cup water
    2/3 cup vinegar
    1 cup brown sugar
    2 Tbsp. dry mustard
    3 beaten eggs

    Directions

    Cook all ingredients in
    double boiler, stirring
    constantly until thickened.
    Will keep for a long time
    in the refrigerator.


    Apricot-Orange Glaze
    for Ham

    Ingredients

    1/2 cup apricot jam
    1 1/2 tsp. cornstarch
    1 tsp. grated orange peel
    1/8 tsp. ground nutmeg
    1/8 tsp. ground allspice
    1/4 cup orange juice

    Directions

    Mix together all
    ingredients. Cook over
    medium heat, stirring
    constantly ubtil thickened
    and boiling.
    Yields 3/4 cup.


    Raisin Sauce for Ham

    Ingredients

    1/2 cup sugar
    1 tsp. dry mustard
    1/4 cup seedless raisins
    1 cup red wine
    1 cup water

    Directions

    Mix together all
    ingredients and cook for
    about 20 minutes.
    You can also add a jar of
    currant jelly, if desired.
