Pineapple Fudge

    Ingredients

    1 cup evaporated milk
    3 cups sugar
    2 Tbsp. butter
    1 cup crushed pinapple, well drained
    2 tsp. lemon juice

    Directions

    Combine milk, sugar and butter; heat slowly to
    boiling point.  Add pineapple; cook over medium
    heat for about 25 minutes to soft-ball stage or 235
    degrees, stirring constantly to prevent burning.  
    Cool.
    Add lemon juice.  Beat until crystalline.  Turn into
    buttered pan.
    Cut into squares; garnish with pecan halves.
    Makes 1 2/3 pounds.
