Caramel Chocolate Fudge

    Ingredients

    2 cups light brown sugar, packed
    2 Tbsp. cocoa
    1/8 tsp. salt
    1/2 cup white corn syrup
    1/2 cup evaporated milk
    1/2 cup milk
    2 Tbsp. butter
    1 tsp. vanilla
    2 cups chopped pecans

    Directions

    Blend sugar, cocoa and salt together; add syrup
    and milks.  Place on medium heat, stirring until
    boiling begins.  
    Reduce heat slightly; cook until mixture reaches
    firm soft-ball stage.  Careful occasional stirring
    may be done while mixture is cooking for more
    accurate testing.  
    Remove for heat; cool for about 10 minutes.
    Add butter, vanilla and pecans.  Beat until gloss
    disappears completely.
    Pour into buttered square pan.
    Cut into squares.
    Makes 30 to 35 squares.
