Cherry Deluxe Salad

    Ingredients

    2 cups crushed pineapple
    1 1/2 cups sugar
    1 1/2 pkg. unflavored gelatin
    1 3-oz. package cream cheese, softened
    12 maraschino cherries
    2 Tbsp. cherry juice
    2 Tbsp. lemon juice
    1/2 cup chopped nuts
    1 cup whipped cream

    Directions

    Heat pineapple and sugar together until sugar is
    melted.  Soften gelatin in 1/4 cup water; add to
    pineapple mixture.  Stir in cream cheese until
    smooth.  Let cool.  Add cherries, juices and
    pecans; fold in whipped cream.
    Pour into mold.
    Chill until firm.
    Makes 10 servings.
