Avocado Salad

    Ingredients

    1 pkg. lemon Jell-O
    1 3-oz. pkg. cream cheese
    1/2 cup mayonnaise
    1 avocado, peeled and mashed
    1/2 cup diced celery
    1 Tbsp. onion juice (opt.)
    1/4 cup diced green pepper

    Directions

    Prepare Jell-O according to package directions.  
    Chill until partially set.  Combine cream cheese,
    mayonnaise and avocado.  Mix until smooth.  Add
    celery, onion juice and green pepper.  
    Fold into Jell-O.  
    Pour into a 9-inch square glass pan.  Chill until
    firm.  
    Cut into squares.  
    Place on lettuce leaf.  top with a dollop of
    mayonnaise.  
    Serve with assorted crackers.
    Makes 9 servings.
