Avocado Ring Mold Salad

    Ingredients

    1 pkg. lemon gelatin
    2 ripe avocados, mashed
    1/4 cup sour cream
    2 Tbsp. white wine
    1/8 tsp. salt
    1 cup heavy cream, whipped

    Directions

    Dissolve gelatin in 1 cup boiling water.  Add
    avocados, sour cream, wine and salt; beat until
    smooth and fluffy.  Chill until partially congealed.
    Fold in whipped cream; pour into ring mold.
    Chill until firm.  Unmold onto crisp salad greens.
    Makes 6 servings.
