Apricot Parfait Salad

    Ingredients

    1 11-oz. can mandarin oranges
    1 1lb can apricot halves
    1 3-oz. package apricot gelatin
    1 pt. vanilla ice cream
    1 cup halved seeded grapes
    1/4 cup broken walnuts

    Directions

    Drain oranges and apricots reserve juices.  Chop
    apricots.  Add enough water to reserved juices to
    measure 1 1/2 liquid; pour into saucepan.  Bring
    to a boil.  Add gelatin; stir until dissolved.  Add
    spoonfuls of ice cream; stir until melted.  
    Chill until partially congealed.  Stir in fruits and
    walnuts; pour into 9-inch square pan.
    Chill until firm.
    Makes 9 servings.
