Pumpkin Cookies
4 cups flour 2 cups quick oats 2 tsp. baking soda 2 tsp. cinnamon 1 tsp. salt 1 1/2 cups butter 2 cups brown sugar 1 cup sugar 1 egg 1 tsp. vanilla 16 oz. can pumpkin 1 cup chocolate chips Directions Combine flour, oats, soda, cinnamon and salt. Set aside. Cream butter; gradually add sugars, beating until light and fluffy. Add egg and vanilla; mix well. Alternate additions of dry ingredients and the pumpkin mixture, mixing well after each addition. Stir in chocolate chips. For each cookie drop 1/4 cup dough onto cookie sheet. Bake at 350 for 20 to 25 minutes. Frost with cream cheese frosting. |
