Southern Fried Chicken
2 1/2 lbs. chicken 2 1/2 tsp. salt 1/2 tsp. black pepper 3/4 cup flour Shortening for frying Wash and cut chicken into serving-size pieces. Rub 1 tsp. of the salt into the skin. Mix remaining salt, black pepper, and flour. Dip the wet chicken pieces into the mixture, coating them well. Melt enough shortening in a heavy skillet to provide a depth of 1/4 inch. Add chicken and cook slowly 40 to 50 minutes or until tender, turning to brown evenly on both sides. Add more fat as the chicken cooks, if necessary. Drain on paper towels. |
