Golden Chicken and Rice

    Ingredients

    1 can cream of mushroom soup
    3/4 lb. process cheese spread
    3 cups cooked rice
    1/2 cup chopped onion
    2 Tbsp. chopped pimiento
    1 (2 1/2 to 3 lb.) broiler fryer, cut up

    Heat soup and cheese over low heat; stir until
    melted.  Add rice, onion, and pimiento; mix well.  
    Pour into 13 1/2 x 8 3/4 inch baking dish.  Arrange
    chicked on top of rice mixture.  Cover; bake at
    350° for 45 minutes.  Uncover; bake an additional
    15 minutes.
