Anise Chicken
3 lbs. chicken, cut up 1/3 cup flour 1/4 cup shortening 1/4 cup onion flakes 3 Tbsp. water 1 cup chicken stock 2 tsp. salt 1/4 tsp. anise seed 1 Tbsp. parsley flakes 1/8 tsp. ground black pepper 2 large egg yolks 1 Tbsp. fresh lemon juice 1/3 cup water Flour chicken pieces lightly and brown on both sides in shorting, adding it as needed. Soften onion flakes in the 3 tablespoons water and add to chicken. Saute 2 to 3 minutes. Add next 3 ingredients. Cover and cook 30 minutes or until chicken is tender. Add parsley and black pepper 5 minutes before cooking time is up. Remove from heat. Mix next 3 ingredients and blend with the gravy. Heat 1/2 minute or until gravy is thick. Serve on rice. |
