    4 cups prickly pear cactus
     or 4 cups nopales
    3 cups granulated sugar
    1 cup water
    2 tablespoons orange juice
    1  tablespoon lemon juice

Directions

Note: it's illegal to remove
prickly pear cactus from the
desert

1. Select prickly pear cactus. Remove
spines and outside layer(skin) with large
knife or buy one already spined, can be
found in most stores).

2.  Cut pulp across in slices one-inch
thick.

3. Soak overnight in cold water.

4.  Remove from water, cut into  1"
cubes and cook in boiling water until
tender, then drain.

5. Heat all remaining ingredientsr and
water until sugar is dissolved. Then add
cactus.

6. Cook slowly in the syrup until nearly all
the syrup is absorbed.
Do not scorch!

7. Remove cactus from syrup, drain and
roll in granulated or powdered sugar.

For colored cactus candy, any
vegetable food coloring may be added
to the syrup.
