Zucchini Nut Bread

    Ingredients

    3 eggs, beaten
    2 1/4 cups brown sugar
    1 cup oil
    2 cups shredded zucchini
    3 tsp. vanilla
    3 cups flour
    1 tsp. soda
    1 tsp. salt
    1/4 tsp. baking powder
    3 tsp. cinnamon
    1 cup chopped nuts

    Directions

    Preheat oven to 325.
    Beat eggs until light and fluffy.  Add sugar, oil and
    vanilla.  Blend well.  Stir in zucchini.  Sift together
    flour, baking powder, soda, salt, and spices.  
    Blend into egg mixture.  Stir in nuts.  Grease and
    flour 2 loaf pans.  Divide batter equally between  
    pans.  Bake at 325 about 1 hour.
