Wild Blackberry Muffins

    Ingredients

    1 cup rolled oats
    1 cup buttermilk
    1/4 cup canola oil
    1/4 cup honey
    1 egg
    1 cup whole wheat flour
    1 tsp. baking powder
    1/2 tsp. salt
    1/2 tsp. baking soda
    1 cup wild blackberries (fresh or frozen)

    Directions

    Soak oats in buttermilk overnight.
    Mix in oil, honey and egg to oats and buttermilk.   
    Mix together flour, baking powder, salt, and soda.  
    Stir egg mixture and dry mixture together.  Fold in
    blackberries.
    Spray muffin tins with Pam and fill 2/3 full.
    Bake at 400 for 20 to 25 minutes.
    Makes 1 dozen muffins.
